AREA OF ORIGIN: Wellington
VINEYARD: North facing, gently sloping; eroded granite soil. 1.3 Hectares. Planted in 2003, producing 8 tons merlot as its second harvest.
WINEMAKER: Corlea Fourie
HARVEST DETAILS: Handpicked February 2007, early in the morning at low temperatures.
CELLAR TREATMENT: Grapes were cooled in the cold room at 5?C overnight. After destalking, the whole berries fermented on the skins for 2-3 weeks. After removing of skins, malolactic fermentation followed in French oak barrels.
COOPER: French oak barrels.
TASTING NOTES: A deep purple full bodied wine, lush with soft integrated tannins. Aromas of ripe dark fruit, spices and oak linger on the palate and in the memory, long after the last sip.
SERVING: Light to flavoured red meat dishes. Grilled food. including tuna.Beef , ostrich and venison.
